Spaghetti Carbonara

Ingredients
  

  • 200 g Riverland Smallgoods Ham, roughly chopped
  • 400 g Spaghetti
  • 125 g Parmesan cheese, grated
  • 1 cup Cream
  • 2 Eggs
  • 1/3 cup Chives, finely chopped

Instructions
 

  • In a pot, bring water to a medium boil and add salt. Once it's boiling, add the spaghetti and cook for around 11 minutes until it's al dente. Then, remove itand set it aside, saving one tablespoon of pasta water.
  • In a mixing bowl, blend together the cream, eggs, three-quarters of the parmesancheese, chives, and a pinch of salt and pepper.
  • Transfer the cooked pasta to a saucepan. Then, add the reserved pasta water, the egg mixture, and the ham. Gently stir over low heat until the sauce thickens. Season with salt and pepper to taste. Finally, serve your dish, sprinkling it with the remaining parmesan cheese.
